Ingredients:

  • 6 boneless, skinless chicken thighs (about 0.7 kg total)
  • 1⁄8 cup olive oil
  • 2 tablespoons Dijon honey mustard
  • 6 garlic cloves, minced (or 3 large cloves)
  • Zest of 2 lemons
  • 1⁄2 teaspoon salt (adjust if using table salt)
  • Dried oregano, to taste
  • 1 cup water or chicken stock (for baking dish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the olive oil, Dijon honey mustard, minced garlic, lemon zest, salt, and oregano until fully combined.
  3. Place the chicken thighs in a ziplock bag or shallow dish and pour the marinade over them. Seal or cover, and refrigerate for at least 30 minutes to allow the flavors to infuse.
  4. In a large skillet, heat a bit of olive oil over medium-high heat. Once hot, sear the chicken thighs for 3–4 minutes per side until golden brown.
  5. Transfer the seared chicken to a baking dish. Pour water or chicken stock into the bottom of the dish to keep the chicken moist during baking.
  6. Cover the dish with foil and bake in the preheated oven for 20–25 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the oven and let it rest for a few minutes before slicing it into thin strips.
  8. Serve the herb-infused chicken on warm pita bread. Top with your favorite gyro fixings—fresh tomato, cucumber, red onion, and a generous spoonful of tzatziki sauce.
